Ingredients

The Beef

The Rice

  • 3/4 cup white rice dry
  • 1/2 lime juiced
  • 1/4 cup cilantro chopped
  • 1 tsp chicken bouillon

The Rest

  • 10 large tortilla
  • 4 cup shredded cheese
  • 1 1/4 cup queso
  • Fire Sauce
  • 1 1/4 cup sour cream
  • 2 1/2 cup salsa for serving

Instructions

The Meat

  • in a large pan, cook the ground beef on medium heat, breaking up til browned- 3-5 minutes
  • Add the seasoning and water, stir to combine and simmer for another 2 minutes

The Rice

  • Cook rice as desired, adding the bouillon to the water before boil
  • When rice is done stir in cilantro and lime juice

The Quesarito

  • bring a large pan or griddle to high heat- over 300F- lay a tortilla down in the pan, spread over with shredded cheese, lay second tortilla on top. Cook 2 mins per side and repeat with all tortillas and shredded cheese
  • place a line of beef and a line of rice in the center of a quesadilla you just made, top with sour cream, queso and fire sauce. Roll like burrito, cut on a bias and serve with salsa for dipping
