Hearty Meatball Stew
This was my first time making meatballs with part ground beef, part sausage. I’m probably never going back. There's a healthier version here http://www.cucumbertown.com/heart-meatball-stew-sissy-diet-recipe-dish
Servings: 6 serving
Ingredients
- 1/4 cup bread crumbs
- 1/2 lb ground beef regular
- 2 sausages sweet italian , casing removed
- 1 egg
- 1 tbsp parsley chopped
- 1 tbsp flour
- olive oil
- 1 onion large , chopped
- 1 red bell pepper , chopped
- 1/2 lb white mushrooms whole , de - stemmed and quartered
- 1/2 lb yukon gold potatoes baby , halved
- 1/4 lb green beans , trimmed
- 1 28 oz tomatoes diced , drained cans
- 1/4 tsp red pepper crush
- salt pepper /
- 1 1/2 cups chicken broth
Instructions
- Lightly mix together meats, breadcrumbs, egg, parsley, salt and pepper. Form into 6 large meatballs
- Dust meatballs with flour
- Heat some olive oil on high in a large pan, fry meatballs, 2 mins per side then remove to a plate
- Reduce heat to medium-high, Add onions and red peppers, salt and pepper to pan. Saute, stirring occasionally til soft. Roughly 5 mins.
- Add mushrooms, more salt and pepper and saute til soft- another 5mins.
- add potatoes, tomatoes, chicken broth. Turn heat back to high and bring to a boil, stirring occasionally
- Reduce to simmer, add meatballs back in, making sure they are partially submerged.
- Cover and cook til potatoes are soft, roughly 20 mins. Remove cover and simmer another 5 mins to reduce liquid.
