- 1/2 lb white mushrooms whole , de – stemmed and quartered
- 1/2 lb yukon gold potato baby , halved
- 1/4 lb green beans , trimmed
- 1 28 oz tomato diced , drained cans
- 1/4 tsp red pepper crush
- salt and pepper /
- 1 1/2 cups chicken broth
- 1/4 cup red wine tart, I used a Baco Noir
- Lightly mix together meats, breadcrumbs, egg, parsley, salt and pepper. Form into 6 large meatballs
- Heat some olive oil on high in a large pan, fry meatballs, 2 mins per side then remove to a plate
- Reduce heat to medium-high, Add onions and red peppers, salt and pepper to pan. Saute, stirring occasionally til soft. Roughly 5 mins.
- Add mushrooms, more salt and pepper and saute til soft- another 5mins.
- use red wine to deglaze pan
- add potatoes, tomatoes, chicken broth. Turn heat back to high and bring to a boil, stirring occasionally
- Reduce to simmer, add meatballs back in, making sure they are partially submerged.
- Cover and cook til potatoes are soft, roughly 20 mins. Remove cover and simmer another 5 mins to reduce liquid.
