Bacon Cheddar Meatloaf with Guinness Sauce
It’s literally a clump of 2 kinds of ground meat that I wrapped in bacon and poured beer on.

Ingredients
- 3/4 lb ground beef
- 3/4 lb ground veal
- 1 tbsp mustard
- 1 tbsp worcestershire sauce
- 1 egg
- 1/4 cup bread crumbs
- 1/4 cup milk
- 1/2 cup cheddar cheese shredded old
- salt and pepper /
- 1 lb bacon
- 1 tbsp chopped garlic
- 1 tbsp brown sugar
- 1 tbsp cider vinegar
Instructions
- preheat oven to 350F
- in a large mixing bowl, mix together meats, mustard, worcestershire sauce, egg, breadcrumbs, milk, salt / pepper, cheddar
- Line a meatloaf pan with the bacon by draping the bacon strips into it, leaving a couple inches draped outside the pan
- Pack the pan with the meat mixture, then fold the extra bacon over the top, like wrapping a delicious meat present with more meat
- Put the meat loaf in the oven for 1 hour
- Pour the guinness into a pot and bring to a boil
- lower heat to medium high and simmer til liquid is reduced by half.
- Mix in sugar and vinegar
- When the meat loaf is done, allow to sit 20 minutes before cutting
