Ingredients

The Meatballs

  • 1 lb ground pork
  • 1 large egg
  • 1/2 cup bread crumbs
  • salt and pepper

Everything Else

  • 8 oz penne dry
  • 28 oz diced tomatoes
  • 2 cups milk
  • 1/2 cup butter melted
  • 3 tsp chopped garlic
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp italian seasoning
  • 1/2 bunch spinach
  • 1/2 cup grated parmesan

Instructions

Meatballs

  • Combine all the meatball ingredients into a medium sized mixing bowl and form into golf ball sized meatballs
  • Heat some oil in a skillet and brown the meatballs on all sides- about 5 minutes

Penne

  • Preheat the oven to 400F
  • in a 9x13 baking dish stir together all ingredients except the spinach and parmesan. Add the meatballs, making sure to press them down to the bottom. Cover the dish with tin foil and bake for 35 minutes.
  • Remove the dish from the oven, add the spinach in a layer on top of everything, re-cover and bake another 3-5 minutes until the spinach is fully wilted.
  • Remove the foil and spread the parm on top. Broil for 3-5 minutes
