Ingredients

The Stuffing

  • 120 g goat cheese plain
  • 1/2 head spinach rinsed
  • 1 tbsp chopped garlic
  • 1 tbsp butter
  • 1/3 cup sun dried tomato rough chopped
  • 1/2 cup mozzarella fresh, shredded
  • 1/4 cup grated parmesan
  • 1 tsp italian seasoning

The chicken

  • 3 large Chicken Breasts boneless, skinless, sliced almost in half horizontally
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • salt and pepper

Instructions

  • preheat your oven to 375F
  • Sautee the spinach in the garlic and butter and set aside
  • Combine all stuffing ingredients in a medium sized mixing bowl, using tongs add the spinach, without its juices to the mixing bowl
  • Using a wooden spoon fold together all the stuffing ingredients
  • Open the chicken breasts and last them flat, open side up, season liberally with salt and pepper, flip, then season the outside liberally with paprika and garlic powder
  • Stuff the chicken breasts with the cheese mixture, close and optionally use toothpicks to hold shut
  • Heat oil in an oven safe skillet on medium, when shimmering add the chicken breasts and sear for 2 minutes, flip and sear again 2 minutes
  • Finish the chicken in the oven until 145F internal temp
