Spicy Miso Broth Ramen with Hot and Sour Pork

Ingredients

The Paste

  • 1/3 cup red miso paste
  • 2 tbsp chili garlic paste
  • 3 tsp chopped garlic
  • 1-2 tbsp zested ginger
  • 3 tbsp mirin
  • 1 tbsp vegetable oil
  • 1/2 tbsp sesame oil

The Broth and raw toppings

  • 2 cups chicken broth
  • 11/2 cups unsweetened soy milk
  • 1 cup Bean sprouts
  • 1 cup green onion
  • 2 egg soft boiled and halved
  • 200 g ramen noodles cooked to package instructions
  • 8-10 slices Kamaboko fish cake
  • 2 heaping tbsp chili garlic sauce

The Pork

  • 1 tbsp chili garlic sauce
  • 1/2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp honey
  • 1/2 tbsp white rice vinegar
  • 2 tsp sesame seeds for garnish (optional)
  • 8-10 oz shaved pork loin

Instructions

The paste

  • Whisk all paste ingrendients together in a small mixing bowl and set aside

The broth

  • Add the paste to a small pot with the milk and chicken broth. Whisk together and bring to a simmer, then reduce to low and cover.

The pork

  • Whisk together all the sauce ingredients in a small mixing bowl
  • In a medium pan or wok bring the sauce to a simmer. Add the pork and stir fry til no longer pink. Cover and remove from heat

Building the Ramen

  • Place half the noodles in each noodle bowl, add a heaping tbsp of chili garlic sauce and cover with broth and then top with the topping ingredients. Garnish the pork with sesame seeds if you want.
