Spicy Miso Broth Ramen with Hot and Sour Pork
Servings: 2 bowls
Ingredients
The Paste
- 1/3 cup red miso paste
- 2 tbsp chili garlic paste
- 3 tsp chopped garlic
- 1-2 tbsp zested ginger
- 3 tbsp mirin
- 1 tbsp vegetable oil
- 1/2 tbsp sesame oil
The Broth and raw toppings
- 2 cups chicken broth
- 11/2 cups unsweetened soy milk
- 1 cup Bean sprouts
- 1 cup green onion
- 2 egg soft boiled and halved
- 200 g ramen noodles cooked to package instructions
- 8-10 slices Kamaboko fish cake
- 2 heaping tbsp chili garlic sauce
The Pork
- 1 tbsp chili garlic sauce
- 1/2 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp honey
- 1/2 tbsp white rice vinegar
- 2 tsp sesame seeds for garnish (optional)
- 8-10 oz shaved pork loin
Instructions
The paste
- Whisk all paste ingrendients together in a small mixing bowl and set aside
The broth
- Add the paste to a small pot with the milk and chicken broth. Whisk together and bring to a simmer, then reduce to low and cover.
The pork
- Whisk together all the sauce ingredients in a small mixing bowl
- In a medium pan or wok bring the sauce to a simmer. Add the pork and stir fry til no longer pink. Cover and remove from heat
Building the Ramen
- Place half the noodles in each noodle bowl, add a heaping tbsp of chili garlic sauce and cover with broth and then top with the topping ingredients. Garnish the pork with sesame seeds if you want.
