Simple Chicken Curry
Exactly the same as the chilli chicken, but in a curry sauce instead.
Servings: 4 serving
Ingredients
- 2 chicken breast , cut into bite size pieces
- 1 2 pepper u2033 green chopped into squares
- 1 onion large chopped into large pieces
- 4 tbsps curry powder
- 2 tbsps cumin (optional)
- 1 can coconut milk (400 u2013 500 ml)
- salt and pepper ,
- rice , cooked
Instructions
- Add the chicken pieces to an oiled wok or large pan. Season with 2 tbsp curry powder, salt, pepper and cumin. Fry til no longer pink
- Add the coconut and stir in the other 2 tbsp of curry powder. Bring to a simmer.
- Add onions and green peppers. Stir to combine.
- Cover and simmer for 5-8 minutes, stirring occasionally.
- Serve with rice.
