Paprika Chicken and Smokey Lentils on a Mixed Pepper Salad

There used to be this little African restuarant near my house. One late night, when stumbling home quite drunk and seeing that everything else near by was closed I went in and told (slurred at) the cook to surprise me.
He made me this unbelievable thing that was smokey spiced long grain rice on the bottom, chicken in the middle, spiced similarly (I think he fried the rice with the chicken) and topped with a salad with assorted bell peppers with an Italian dressing. I’ve only ever had this dish while extremely drunk, so my opinion of it could be quite skewed.
Recently the place closed and turned into yet another burrito restaurant. Earlier this week I found myself craving the dish and figured I’d try to approximate it slow carb style

Ingredients

  • 3 chicken breast boneless skinless, cut into bite size pieces
  • 1 tbsp paprika smoked
  • 1 onion large , diced
  • 2 tbsps chopped garlic
  • 1 small can tomato paste
  • 1/4 cup red wine
  • salt and pepper ,
  • 1 540 ml lentils drained cans
  • 1 tbsp paprika smoked
  • 1 tbsp cumin
  • 1/2 tbsp turmeric
  • salt and pepper ,
  • 1 red pepper
  • 1 green pepper yellow
  • 1/3 romaine lettuce head
  • italian dressing

Instructions

  • Add the lentils to a pot and add water til lentils are just covered, add spices and simmer, stirring occasionally until water is gone
  • Add chicken to a large pan with some oil, season with paprika, salt and pepper
  • Once chicken is no longer pink, add onions and garlic and continue to cook, stirring ocassionally for another 5 minutes or so
  • add tomato paste and wine and cook a little longer until chicken is done the way you like
  • Chop the lettuce and peppers into 2u2033 squares
  • Make food pile and eat
