  • 1 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 4 bananas chopped
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1/3 cup vegetable oil plus more for the pan


  • Preheat oven to 350F
  • In a large mixing bowl mix together flour, sugars, baking powder and soda
  • In a medium mixing bowl add the egg, oil and chopped bananas, uses an emulsion blender to puree
  • Add the banana mix to the flour and mix til fully combined
  • brush a 12 slot muffin pan with oil, then spoon batter into slots.
  • Bake at 350F for 20-23 minutes
