Easy Spinach Chef Salad
Tim doesn’t stop talking about spinach in four hour body, so I’ve been trying to eat a ton of it. Here’s a chef salad I threw together to bolster my spinach intake. Cheese is a nono for the slow carb diet, so don’t add it if you don’t want to. Also make sure the dressing you use (I use greek or whatever vinegrette catches my eye at the grocery store) is slow carb okay. Also keep the tomatoes to a minimum (I do 4 per salad).
I boiled a bunch of eggs at once and keep them in the fridge so assembling this salad is quick and easy. Depending on how much ham you pile on this can stand on its own as a lunch, but I’ve been eating it with soup.

Ingredients
- spinach a pile of baby
- 4 plum tomatoes
- 100 g Ham deli sliced , torn up
- 1 egg hard boiled peeled and sliced
- cheddar cheese shredded (optional)
- bacon bits
Instructions
- Pile it all up and dump on the dressing. Easy peasy.
