Ingredients

  • 5 - 6 kale leaves , stems removed
  • 1/2 lb bacon , cut into squares
  • 450 g ricotta cheese
  • 1 onion medium , diced
  • 2 tbsps chopped garlic
  • pepper ground
  • 1/4 cup pasta water from the penne
  • 1/4 cup parmesan cheese grated

Instructions

  • steam the kale for 8-12 minutes until fully wilted, chop finely and set aside.
  • Heat a large pan on medium high, add bacon and cook til it stiffens, 5-8 minutes.
  • Add onions and garlic, season with pepper and cook til onions soften- 2-4 minutes
  • In a large mixing bowl combine ricotta, parmesan, bacon, kale, pasta. Add 1/4 cup pasta water slowly while stirring til sauce consistency is how you want it
