pro tip: slice your toppings thin. Less than 1/4″ or they’ll overwhelm the patty. Especially the pineapple

Aussie Burger

Ingredients
The Sauce
- 1 tbsp ketchup
- 1 tbsp mayonnaise
- 1 tsp sriracha
The Burger
- 1 brioche bun halved
- 1/3 lb ground beef medium grind (80/20)
- 1 pickle cut into rounds
- 1 tomato sliced
- 1 large onion sweet, cut into rings
- 1 strip bacon thick cut, cut in half
- 1 ring pineapple
- 1 large egg
- 1 slice pickled beet
- 1 leaf iceberg lettuce
- salt
- butter
- 1 slice cheddar cheese
Instructions
The Sauce
- Whisk together all ingredients in a small bowl and set aside
The Burger
- Grill the onions and pineapple in a grill pan (or bbq) on medium-high until brown grill marks form, about 2 minutes per side
- heat a medium cast iron skillet to medium-high and fry the bacon to firm and dark brown, but not crisp, remove from pan and set aside
- Form the ground beef into a loosely packed ball, press it into the pan enough to form about a 3/4" patty, or until its circumference is slightly more than the bun's. Cook 3 minutes per side If you have a burger press leave it on the patty while it cooks, but dont press hard anymore
- when there's 1 minute left on the second side of the burger top it with the cheese, add 1 tsp of water to the pan and cover with a lid for the last minute to melt the cheese
- Remove the patty from the pan and add the egg, cook til whites set, but yolk remains runny- about 3 minutes
- Assemble the burger- heel,patty, pickles, tomatoes, bacon, pineapple, onions, egg, beet,lettuce, and spread the sauce on the top bun
