Montreal Smoked Meat Animal Style Smash Burger

Ingredients

The Burger

  • 4-5 slices Montreal Smoked Meat Schwartz's, natch
  • 2 slices swiss cheese
  • 2 rings onion
  • 5 oz ground beef 80/20
  • 1 brioche bun
  • 3 tbsp coleslaw vinaigrette dressing, I used Schwartz's
  • 1 tbsp mustard plus more for serving
  • 1 pinch salt
  • 1 tbsp butter

The Special Sauce (makes about 2 tbsp)

  • 1 tbsp mayonnaise
  • 1/2 tbsp ketchup
  • 1/2 tbsp relish
  • 1 tsp apple cider vinegar
  • 1/2 tsp onion powder
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  • Heat a large skillet on high til almost smoking
  • While the pan heats, form the meat into a loose ball
  • When the pan is ready, add the butter and move around to fully melt, add the meat ball, season with salt and smash, cook for 1 minute, flip and brush with mustard and cook another 30 seconds. Remove from the pan and set aside.
  • Turn the heat down to medium high, add the smoked meat to the pan in a pile about the size of the bun. Top with the cheese, squirt a little water in the pan and cover for 30-60 seconds until cheese is fully melted. Remove from pan and set aside
  • Toast the buns in the pan for 30-60 seconds
  • Build the burger: onions, slaw, patty, meat / cheese, special sauce, top. Cut the burger in half and serve with more mustard on the side.
