The Quesadillas
- 10 7 in tortilla
- 1 lb cremini mushrooms rinsed, rough chopped
- 1 bunch spinach rinsed
- 250 g mozzarella shredded
- 375 ml salsa optional for serving
- 375 ml sour cream optional for serving
- 1/3 cup water
- 1 large red onion sliced
The Spice Mix
- 1/2 tbsp chili powder
- 1/2 tsp garlic powder
- 3/4 tsp onion powder
- 1/4 tsp oregano
- 1/2 tsp paprika
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp italian seasoning
- 1 1/4 tsp cumin
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 tsp balsamic vinegar
Instructions
The filling
- Combine the dry spices in a small bowl
- Add mushrooms to a large mixing bowl, coat and toss with oil, vinegar and soy sauce
- season the mushrooms with the spice mix and massage to coat thoroughly
- Saute the mushrooms in 2 batches in a large heavy bottom skillet. Saute on medium-high for 5-8 minutes a batch until fragrant and darkened.
- After mushroom batches are cooked, return all to pan with the spinach and onion
- cover and steam for 2 minutes, uncover, toss to combine and steam another 2 minutes
- uncover and simmer another 4 minutes to reduce liquid
- remove the filling from the pan with a slotted spoon, discard the remaining juices
The Assembly
- clean and oil the pan and bring to medium high (around 300F), lay a tortilla down and add 1/10 (25g) of shredded cheese spread evenly on the tortilla
- add 1/5 of the filling, spread evenly around the tortilla, top with another 25g of cheese and a second tortilla
- Press the quesadilla firmly into the pan, add a lid and cook for 90 seconds
- Using a large spatula quickly flip the quesadilla, cover again and cook another 90 seconds
- Cut tortilla into 4, serve with salsa and sour cream
