So for some reason I was craving quesadillas and didn’t know why. Then the man at the Mexican Grocer wished me a happy Cinco De Mayo and it all made sense.

So for some reason I was craving quesadillas and didn’t know why. Then the man at the Mexican Grocer wished me a happy Cinco De Mayo and it all made sense.

Ingredients
- 6 10 tortilla u2033
- 3 chicken breast medium , diced
- 2 cups corn
- 2 peppers sweet (red, orange or yellow)
- 3 cups cheddar cheese shredded sharp
- 1 tbsp paprika smoky
- 1 tbsp cumin
- 1 tbsp chili powder
- 1/2 tbsp salt
- 1 tsp pepper
- 1/2 cup green onion chopped
- 1/4 cup cilantro chopped fresh
- salsa for serving
- sour cream for serving
- guacamole for serving
Instructions
- Combine paprika, chili powder, cumin salt and pepper in a bowl
- Add chicken and corn to a large pan and cook, stirring occasionally until chicken is no longer pink
- Add 1/2 cup of water to the pan, then stir in spice mix
- Bring the liquid to a boil, then reduce heat and simmer for 5 minutes
- Stir in sweet peppers and cook another 3-5 minutes
- add green onions and cilantro and cook another 3 u2013 5 minutes, then remove from heat
- Grease a shallow pan, heat on medium for a couple minutes, then put a tortilla on the pan
- add a layer of cheese, then spoon on a third of the chicken in an even layer
- cover with more cheese and then another tortilla
- Fry til the bottom tortilla is browned and the bottom cheese is melted. Flip and repeat.
- Cut the quesadilla and serve with salsa, guac and sour cream
