Head to your favourite Asian grocer, grab some miso paste and this recipe is as simple as dumping veggies in a pot of water and simmering!

Ingredients

  • 3 button mushrooms , sliced
  • 2 leek large stalks , chopped
  • 3 green onion stalks , chopped
  • 1 lb firm tofu , diced
  • 8 cups water
  • 1/2 - 3/4 cup miso paste
  • salt pepper and

Instructions

  • Add water to a large pot and set on high.
  • Mix miso paste with a bit of water and stir up with a fork. Stir miso paste into the pot.
  • Add all other ingredients and simmer for 15-20 minutes, tasting occasionally and adjusting flavour with salt and pepper

Notes

If you want to adjust the broth size, the ratio is about 1.5 tbsp miso paste per cup of water.
