Miso Soup
Head to your favourite Asian grocer, grab some miso paste and this recipe is as simple as dumping veggies in a pot of water and simmering!
Servings: 6 serving
Ingredients
- 3 button mushrooms , sliced
- 2 leek large stalks , chopped
- 3 green onion stalks , chopped
- 1 lb firm tofu , diced
- 8 cups water
- 1/2 - 3/4 cup miso paste paste
- salt and pepper and
Instructions
- Add water to a large pot and set on high.
- Mix miso paste with a bit of water and stir up with a fork. Stir miso paste into the pot.
- Add all other ingredients and simmer for 15-20 minutes, tasting occasionally and adjusting flavour with salt and pepper
Notes
If you want to adjust the broth size, the ratio is about 1.5 tbsp miso paste per cup of water.
