Honduran Baleadas

The last time I made these, the blog didn’t even exist! Like the weekday huevos, this comes together quickly if you precook all the sausage and heat it up day of.

Avocado Cilantro Lime Crema

Ingredients

  • 2 8" tortilla
  • 1/2 cup refried beans
  • 100 g chorizo sub spicy Italian as needed
  • 2 large egg
  • 1 tbsp 10% cream
  • pinch salt
  • 1/2 large avocado sliced into 4-6 strips
  • 1/4 cup Avocado Cilantro Lime Crema see recipe above
  • 1/4 cup queso fresco or feta, crumbled
  • cilantro chopped, for garnish
  • 6-8 pickled jalapeno slices see recipe above

Instructions

  • Uncase all the sausage and cook til done, breaking up well. Drain and set aside.
  • Whisk together eggs, cream, and a pinch of salt. Scramble and cook to desired doneness, set aside
  • Assemble balleadas- spread half the refried beans on a tortilla, add half the sausage, egg, avocado slices, jalapenos, crema, cheese, optional cilantro and hot sauce garnish
  • Fold and slice the balleadas into triangle pieces, or serve flat and eat like a taco
