Greek Tuna Pasta Salad

One quick note: For the olives you want 1 cup after you’ve finely chopped them. You want a fine chop because the olives are very flavourful so you want a little in every bite instead of a lot in occasional bites.

Ingredients

  • 450 g penne dry
  • 1 large cucumber cut into 1/2" triangles
  • 1 pint grape tomatoes halved
  • 1 cup kalamata olives pitted, chopped fine
  • 8 oz marinaded artichoke hearts chopped roughly
  • 1/2 large red onion diced
  • 1 cup feta cheese crumbled
  • 10 oz canned tuna chunked, in water, drained
  • 3/4 cup parsley chopped fine
  • 1 cup Greek dressing see link above for recipe

Instructions

  • Cook the pasta to al dente, drain and rinse with cool water until noodles are room temperature
  • combine all ingredients in a large bowl and toss until evenly mixed.
