  • 350 g chicken breast diced
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp chopped garlic
  • 1 tsp oregano
  • 1/2 tsp salt
  • 175 g zucchini chopped
  • 175 g grape tomatoes halved
  • 1/2 medium red onion
  • 50 g feta cheese crumbled
  • 10 egg
  • 1/2 cup 2% milk
  • pepper
  • 1 cup salsa


  • pre-heat oven to 350F
  • On Medium high, heat the oil, vinegar, garlic, salt and oregano in a large pan.
  • When the mixture begins to sizzle, stir in the chicken and brown. About 5-8 minutes. With a slotted spoon remove the chicken and set aside.
  • Add the tomatoes and zucchini to the pan and sautee til tomatoes wilt and zucchini browns- another 8-10 minutes.
  • Mix together eggs, milk and pepper (to taste) in a large mixing bowl.
  • Add chicken, all vegetables and cheese to a 9x13 baking dish. Arrange the ingredients to spread out evenly, then pour in the eggs.
  • Bake, covered for 45 minutes until center sets.
  • Serve with salsa (2 tbsp per piece)
