Falafel With Grilled Halloumi and Peanut Sauce

Falafel With Grilled Halloumi and Peanut Sauce

Ingredients

  • 4-5 8 inch pocket pita if you’re not making your own from the recipe
  • 1/2 large cucumber sliced
  • 1 bag coleslaw
  • 1 lb halloumi cheese optional seasoned (I used a Mediterranean flavoured one
  • 1/2 large red onion sliced
  • 2 cups pickled turnip
  • 1-2 cups hummus
  • 8-12 large falafel balls halved
  • 1 cup peanut sauce

Instructions

  • Slice the halloumi into quarter inch thick strips and grill on medium low heat for about 3 minutes per side until browned and melting
  • Assemble the sandwiches. Depending on the size of your falafel balls, consider cutting them in half before adding to the sandwich
