Someone mentioned Enchiladas to me earlier this week and it reminded me that I haven’t eaten enchiladas in, like, forever! Then No Frills had a crazy good cheese sale. So I bought 3kg of cheese and made enchiladas!

Someone mentioned Enchiladas to me earlier this week and it reminded me that I haven’t eaten enchiladas in, like, forever! Then No Frills had a crazy good cheese sale. So I bought 3kg of cheese and made enchiladas!
Servings: 8 serving
Ingredients
- 2 cups chicken , cut into strips
- 1 28 oz black beans , drained and rinsed cans
- 2 small strips green pepper cut into
- 1/2 cup green onion , chopped (plus extra to garnish)
- 1/2 cup cilantro fresh , chopped (plus extra to garnish)
- 1/2 cup corn
- 1 tablespoon lime juice
- 7 u2013 10 tortilla small
- 2 1/2 cups cheddar cheese shredded sharp
- sour cream (for serving)
- chili powder
- garlic powder
- salt and pepper /
Instructions
- preheat oven to 375F
- grease a 9xd713 baking dish
- Season the chicken with the chili powder, garlic powder, salt and pepper. Cook through in a large pan (2 u2013 4 minutes, stirring occasionally)
- In a large mixing bowl, mix together chicken, beans, peppers, corn onions, cilantro
- For each tortilla lay down some cheese, then the filling. Roll and place in the baking dish, seam down
- When the dish is full cover the tops of the tortillas with half the remaining cheese
- Evenly coat with the sauce, then evenly coat with the remaining cheese
- Lightly cover the dish with tin foil, then bake for 30 mins.
- Remove tin foil and bake another 2 mins.
- Serve with sour cream, onions and cilantro
