A poached egg with smoked salmon and dijon mustard on a toasted piece of my home made bread. Bread Recipe here

Ingredients
- 2 bread slices of my
- 2 egg , poached
- 70 g salmon smoked
- 1 tbsp dijon mustard
- salt
- pepper
Instructions
- Poach your eggs and toast the bread. I used the vinegar in boiling water at 2 minutes poaching method
- Spread half the dijon on each piece of toast and lay half the smoked salmon on each piece.
- Place a poached egg on each toast piece and season with salt and pepper
