Ingredients

For the stir fry

  • Noodles of choice
  • 2 cups peas snow , trimmed
  • 2 tbsps chopped garlic
  • 2 - 3 mushroom , sliced
  • 1 red pepper , julienned
  • 1 carrot , julienned
  • 1 bunch spinach baby , trimmed
  • 2 celery stalks , chopped

For the Sauce

  • 2 tbsps soy sauce
  • 3 tsps sugar
  • 1 tsp sesame oil
  • 1 tbsp ginger fresh minced
  • to taste sriracha

Instructions

  • Boil noodles to package instructions.
  • In a small bowl whisk together sauce ingredients. Set aside.
  • Heat oil on medium high in a wok, add in mushrooms, carrots and pepper. Stir fry for 3-4 minutes til vegetables soften.
  • Add peas and spinach, cover and let cook another 3-4 minutes, stirring occasionally til spinach wilts.
  • Strain noodles when cooked, add sauce and noodles to the wok, toss continuously til everything is covered evenly in sauce.
