Easy Veggie Stir Fry
Take a bunch of veggies, fry em with soy sauce and sriracha, throw in some noodles. Easy peasy. I used thick ramen noodles- it's what I had on hand
Servings: 3 serving
Ingredients
For the stir fry
- Noodles of choice
- 2 cups peas snow , trimmed
- 2 tbsps chopped garlic
- 2 - 3 mushroom , sliced
- 1 red pepper , julienned
- 1 carrot , julienned
- 1 bunch spinach baby , trimmed
- 2 celery stalks , chopped
For the Sauce
- 2 tbsps soy sauce
- 3 tsps sugar
- 1 tsp sesame oil
- 1 tbsp ginger fresh minced
- to taste sriracha
Instructions
- Boil noodles to package instructions.
- In a small bowl whisk together sauce ingredients. Set aside.
- Heat oil on medium high in a wok, add in mushrooms, carrots and pepper. Stir fry for 3-4 minutes til vegetables soften.
- Add peas and spinach, cover and let cook another 3-4 minutes, stirring occasionally til spinach wilts.
- Strain noodles when cooked, add sauce and noodles to the wok, toss continuously til everything is covered evenly in sauce.
