Chocolate Raspberry Avocado Mousse

Ingredients

  • 2 large avocado very ripe, pitted, peeled
  • 1/2 cup cocoa powder unsweetened
  • 1/3 cup brown sugar
  • 1/3 cup soy milk unsweetened
  • 4 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1/2 cup raspberries

Instructions

  • Place the raspberries in the food processor and process into a almost a liquid strain the raspberry liquid through a fine mesh sieve, pressing it through with a rubber spatula to get rid of the seeds. Return the raspberry liquid, sans seeds, to the food processor
  • Put everything else in the food processor and process on high until completely smooth. Taste and adjust as desired with more vanilla and / or brown sugar
