Ingredients

For The Buns

  • 2 1/4 tsps yeast
  • 1 cup almond milk unsweetend
  • 1/2 cup butter
  • 1/4 tsp salt
  • 3 cups flour
  • 1 tbsp cinnamon
  • 1/4 cup sugar + 1 tbsps

For The Icing

  • 4 tbsps butter , softened
  • 2 cups sugar powdered
  • 4 ounces cream cheese plain , softened
  • 1/4 tsp vanilla extract

Instructions

  • Place butter and milk in a microwavable bowl and microwave 30 seconds at a time til butter is melted. Place bowl in an ice bath til the milk is 100F or lower (warm, but you can hold the bowl comfortably). Add the mixture to a large mixing bowl
  • Stir in yeast, cover the bowl and let rest for 10 minutes, when you uncover it should be all bubbly. Add 1 tbsp sugar, salt and stir to combine.
  • While constantly stirring, add the flour 1/2 cup at a time. Knead the dough with your hands for a minute or two until it's formed into a loose ball. Cover and let rise for an hour.
  • Preheat oven to 350F
  • On a lightly floured surface roll the dough out into a long rectangle about 4-5" wide and 1/4" thick.
  • In a small bowl thoroughly mix together remaining butter, 1/4 cup sugar and cinnamon. Brush it all on to the top of the dough.
  • Now roll the dough into a long log and cut into 2-3" long sections. Place them, standing up, into an 8x8 glass baking dish. Bake at 350 for 25-30 mins until slightly browned.
  • While the buns are cooking, to make the icing add butter, cream cheese and vanilla to a medium mixing bowl. Whisk in powdered sugar 1/2 cup at a time
