Chicken Salad with Asian Pear and Sriracha Dressing
Chicken Salad with Asian Pear and Sriracha Dressing Recipe by Raymond Selzer
Servings: 4 serving
Ingredients
- 1/4 cup mayonnaise light works too
- 2 tbsps apple cider vinegar
- 1 tbsp sriracha
- 1 tbsp dijon mustard
- 2 cups chicken cooked , pieces 1/2 "
- 2 celery ribs diced small
- 1 red onion slice diced
- 1/4 cup green onion chopped
- 2 tbsps parsley fresh chopped fine
- 1 asian pear cored , diced medium
- 1/4 cup raisins
- salt
- pepper
Instructions
- heat some olive oil in a large pan on medium high. Put chicken in pan, season liberally with salt and pepper, cook 4 - 6 minutes
- In a small mixing bowl whisk together mayo, vinegar, sriracha, mustard. Season with salt and pepper
- Toss chicken, fruits and vegetables with dressing til thoroughly coated. Refrigerate at least an hour before serving.
