Buffalo Cauliflower Bites with Blue Cheese Dipping Sauce

Ingredients
For the Cauliflower
- 1 head cauliflower
- 1 cup milk
- 1 cup flour
- 1 tsp garlic powder
- 1 tbsp olive oil
- 2/3 cups bread crumbs
For The Buffalo Sauce
- 2/3 cups Hot Sauce Franks Red
- 1/3 cups Salted Butter
- 1 tbsp ketchup
For The Blue Cheese Dip
- 3/4 cup mayonaise
- 1 tbsp chopped garlic
- 1/2 cup sour cream
- 1 tbsp lemon juice
- 1 tbsp white vinegar
- 1/2 cup blue cheese crumbled
- salt
- pepper
Instructions
- In a medium mixing bowl combine all the dip ingredients except the cheese. Whisk to combine. Use a fork to fold in the cheese and mix.
- Cover the bowl in saran wrap and refrigerate for 2 hours.
- Preheat oven to 425F
- Chop the cauliflower into bite sized pieces (about 20-25)
- Add the rest of the cauliflower ingredients to a bowl and whisk into a batter, then fold in the cauliflower pieces.
- Dump the cauliflower onto a baking pan and spread out evenly. Bake in the oven for 15 minutes.
- While the cauliflower bakes melt the butter in a sauce pan on medium heat. Once the butter has liquefied, add the hot the sauce and ketchup and whisk til combined. Bring the sauce to a simmer then remove from heat.
- Put the cauliflower in a large mixing bowl, gently toss with the sauce then return to the baking sheet and bake another 7 minutes.
