Big n' Bold Pasta Salad
I had a lot of leftover salami, olives and a jalapenos from the nacho sandwich
Servings: 10 serving
Ingredients
For The Salad
- 1 red pepper
- 1 pepper yellow
- 1/2 English cucumber , chopped
- 2 cups grape tomatoes , halved
- 2 cups red onion chopped
- 200 g jalapeno pepper havardi , cut into cubes
- 200 g salami , torn up
- 1/4 cup olive sliced green
For The Dressing
- 3/4 cup olive oil
- 1/2 cup rice wine vinegar white
- 1 tbsp oregano
- 1/4 cup sugar
- 1 tsp salt
- 1 tsp pepper
Instructions
- Cook the rotini to package directions then strain under cold water.
- Combine all salad ingredients in a large mixing bowl.
- In a medium sized mixing bowl whisk together dressing ingredients. Pour dressing over salad and toss to thoroughly coat the salad.
- Cover and refrigerate at least 4 hours, ideally over night.
