Beef And Brocolli Recipe by Raymond Selzer

Ingredients
The Marinade
- 1/4 cup soy sauce
- 2 tbsp ginger grated
- 3 tbsp garlic chopped
- 1/4 cup oyster sauce
- 1 tbsp rice vinegar red
- 1/4 cup chinese cooking wine
- 1 - 2 tbsp sambal olek or sriracha
- 1 1/2 tsp baking soda
The Rest
- 3 tbsp flour
- 1 lb flank steak 1/8" thick, 2"x2" size
- 1 large carrot peeled and cut thin (1/4") on the bias
- 3 head broccoli chopped into small florets
- 3/4 cup water
- 1 cup rice dry, cooked to done
Instructions
The Beef & Marinade
- Place the fast fry steak between sheets of plastic wrap and pound out to 1/8" thick, then slice into 2" squares
- Add the meat to large mixing bow, making sure to pull apart any pieces attached together
- Add the baking soda to the meat and massage to fully coat all pieces, then do the same with the flour
- Whisk together marinade ingredients
- Add the meat to a ziplock bag, add the marinade, press any air out of the bag, seal and massage to fully coat the meat. Allow to marinate 30-60 mins
The Stir Fry
- Season your wok with some vegetable oil and bring to heat on medium high until oil is shimmering and whisps of smoke begin to appear- dispose of the oil and add more, continue to heat til shimmering.
- Use tongs to remove the beef from the bag
- Stir fry the beef, constantly moving, until most pieces lose their pink
- Remove the beef to a separate bowl, leaving as much marinade as you can
- add carrots to the wok along with the rest of the marinade
- add the water to the pot and scrape up bottom, cover and steam the carrots for 2 minutes
- add the brocolli and toss to fully coat. Continue to steam for another 2 minutes or until sauce has thickened
- return the beef and any marinade from the bowl and toss to combine
- Continue to stir fry another 1-2 minutes
- remove from heat and serve over rice
