Baked Buffalo Chicken Taquitos
Here’s the dry rub I used Shredded Chicken on home made corn tortillas
Baked Buffalo Taquitos
Servings: 6 servings
Ingredients
- 1 lb chicken breast boneless, skinless
- 6 oz cream cheese low fat
- 1/4 cup buffalo sauce
- 2 cups water
- 1/8 cup blue cheese dressing
- 3 tbsp dry rub see link in description
- oil for frying
- 6 8" flour tortillas
Instructions
- Preheat oven to 425F
- Heat oil in a large pot
- Rub chicken with all the rub to be liberally coated. Sear the breasts on all sides, then add the water and broil for 20 minutes
- While the chicken broils combine the cream cheese and buffalo sauce in a mixing bowl and set aside
- Remove the chicken from the pot, shred it and return it to the pot. Bring to a heavy simmer, reduce heat to medium-low and simmer for 5 minutes.
- use a slotted spoon to remove the chicken from the pot, leaving the liquid. Add the chicken to the bowl of cream cheese and use a spoon to fully fold it in
- spoon the chicken into the tortillas and roll them tightly. Place them evenly in a 9x13 baking dish and bake at 425F for 18 minutes
- Remove the taquitos from the oven, sprinkle evenly with the cheddar and broil for 1 - 2 minutes. Serve topped with blue cheese dressing and optionally with hot sauce or a side of salsa.
