Fried Chicken in Tomato Bacon Sauce

I have a bunch of boneless skinless chicken on hand, I like bacon, this was a no brainer

Ingredients

  • 4 tbsps butter
  • 2 tbsps olive oil
  • 2 - 4 chicken breast boneless skinless
  • 1 onion large , diced
  • 2 tbsps chopped garlic
  • 2 celery stalks
  • 4 strips bacon diced ,
  • 14 - 20 oz tomatoes canned diced
  • 2 tbsps tomato paste
  • 1/2 cup water
  • tbsp basil
  • salt pepper and

Instructions

  • In a large pan, melt 2 tbsp butter, add onion, garlic, celery and bacon. Cook on low for 5 minutes until softened
  • Stir in tomatoes and tomato paste, add salt, pepper and sugar to taste.
  • Add water and bring to a boil then reduce to simmer. Simmer for 15-20 min to reduce.
  • Coat chicken breasts with salt and pepper.
  • In a separate pan, brown on all sides the chicken breasts in 2 tbsp butter and the olive oil
  • Add chicken to sauce, spoon sauce over chicken. Cover pan and simmer 10-15 mins until chicken is done
  • Garnish with fresh chopped parsley
