Bacon Cheddar Jalapeno Soup

  • 1 lb bacon
  • 4 jalapeno pepper , deseeded and diced
  • 1/4 cup butter
  • 3 cups chicken broth
  • 1 tsp thyme
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cumin
  • 3/4 cup heavy cream
  • 300 – 400 g cheddar cheese
  • to taste pepper


  • Cut the bacon into squares and fry to crispy. Remove bacon from the pan and saute the jalapenos. Remove the jalapenos from the grease and set aside.
  • Add butter, bacon grease, spices and broth to a large pot. Bring to a boil then simmer for 15 minutes.
  • Add cream and cheese to the pot and use a hand blender to combine.
  • Add bacon and jalapenos to the pot and simmer another 5 minutes.
