1/4cuppasta water(reserved from when you cook your pasta)
1/2cupbasilleaves only, hand torn into small pieces
Instructions
Heat 1tbsp olive oil in a large pan at medium-high heat until shimmering. About 4 minutes
Add the bacon and saute for 4-6 minutes, stirring frequently
drain most of the grease and oil from the pan, leaving enough to fully coat the bottom
Add the onions, tomato paste and continue to saute at medium-high for another 3 minutes
add the garlic, red pepper flakes and pepper and continue to saute another 2 minutes
Add in the white wine and deglaze the pan with a flat wooden spoon til the bottom is smooth- about 1 minute, then add the oregano
fold in the diced tomato and juices, cover and bring to a boil at high heat, then reduce to medium low and simmer for 20 minutes
Remove the lid and continue to simmer uncovered for another 5 minutes until liquid reduces by half.
Cook your pasta to almost al dente in salted water. Time this to your package directions so that the pasta is ready when the sauce is
drain the pasta, reserving 1/4 cup water. Add the 1/4 cup water to the sauce and stir to combine, then add the pasta and pecorino and toss til fully combined
finally add the basil, give a couple more tosses to combine and then serve!
Notes
If you're using a double smoked bacon or anything with hard skin, remove it in prep.
