Simple Spicy Bacon Sauce

For you enterprising pedants out there, yes this is basically amatriciana with bacon instead of guanciale. Keep that shit to yourself.

The servings are for 3 here, but the recipe easily makes 4 if for some reason the people you’re cooking for don’t like sauce on their pasta

Simple Spicy Bacon Sauce

Ingredients

  • 150 g bacon Hand cut about 1/8" x 1/8" x 1/2" pieces
  • 1/2 tsp red pepper flakes
  • 1/2 tsp pepper
  • 3/4 medium onion diced fine
  • 3 tsp chopped garlic
  • 28 oz diced tomatoes (one can including juice)
  • 1/3 cup pecorino grated. Or parmesan in a pinch.
  • 270 g bucatini or spaghetti
  • 1/4 cup white wine
  • 1 tbsp tomato paste
  • 1/4 cup pasta water (reserved from when you cook your pasta)
  • 1/2 cup basil leaves only, hand torn into small pieces

Instructions

  • Heat 1tbsp olive oil in a large pan at medium-high heat until shimmering. About 4 minutes
  • Add the bacon and saute for 4-6 minutes, stirring frequently
  • drain most of the grease and oil from the pan, leaving enough to fully coat the bottom
  • Add the onions, tomato paste and continue to saute at medium-high for another 3 minutes
  • add the garlic, red pepper flakes and pepper and continue to saute another 2 minutes
  • Add in the white wine and deglaze the pan with a flat wooden spoon til the bottom is smooth- about 1 minute, then add the oregano
  • fold in the diced tomato and juices, cover and bring to a boil at high heat, then reduce to medium low and simmer for 20 minutes
  • Remove the lid and continue to simmer uncovered for another 5 minutes until liquid reduces by half.
  • Cook your pasta to almost al dente in salted water. Time this to your package directions so that the pasta is ready when the sauce is
  • drain the pasta, reserving 1/4 cup water. Add the 1/4 cup water to the sauce and stir to combine, then add the pasta and pecorino and toss til fully combined
  • finally add the basil, give a couple more tosses to combine and then serve!

Notes

If you’re using a double smoked bacon or anything with hard skin, remove it in prep.
