In a medium sized mixing bowl whisk together 3 egg yolks and 1 egg white and lots of pepper to taste
in a small bowl whisk together the parmesan and cheese powder
In a large non stick pan cook the bacon on medium heat until firm, but not yet crisp, about 8 minutes. Once cooked drain all but 2 tbsp of fat, add the garlic and continue to saute another 2-3 minutes til garlic is fragrant and bacon is crisp. Remove from heat and set aside
Cook the noodles to less than package instructions, you want them to still be firm after mixing with the bacon.
Just before the noodles finish whisk the cheeses into the eggs until fully combined
Strain the noodles, reserving the pasta water. Add the strained noodles, cheese and eggs, and 4 tbsp of pasta water stir to full combine.
serve garnished with more parmesan and parsley
