preheat your oven to 375F
Sautee the spinach in the garlic and butter and set aside
Combine all stuffing ingredients in a medium sized mixing bowl, using tongs add the spinach, without its juices to the mixing bowl
Using a wooden spoon fold together all the stuffing ingredients
Open the chicken breasts and lay them flat, open side up, season liberally with salt and pepper, flip, then season the outside liberally with paprika and garlic powder
Stuff the chicken breasts with the cheese mixture, close and optionally use toothpicks to hold shut
Heat oil in an oven safe skillet on medium, when shimmering add the chicken breasts and sear for 2 minutes, flip and sear again 2 minutes
Finish the chicken in the oven until 145F internal temp
