Sweet and Savory Lentil Salad With Collards, Bacon and Asian Pear

Ingredients

  • 1 2 collard greens " bundle cut into pieces
  • 1/2 lb bacon cut into pieces 1 "
  • 540 ml lentils
  • 1/2 asian pear diced
  • 1/2 cup raisins
  • 1/4 cup parsley chopped fine
  • 1/3 cup green onion chopped
  • 2 cups beef broth

Instructions

  • In a large skillet fry bacon til firm but not crisp. Remove from pan and set aside, leave grease
  • Fry the collards in the bacon grease til all the grease is gone, Add the beef broth, bring to a boil then reduce to a simmer. Cover and simmer for 15 minutes or til collards are soft
  • Add lentils, raisins, pears and bacon to the pan, toss to combine and continue to cook uncovered til remainder of broth is gone, 4-6 minutes.
  • Stir in green onions and parsley and cook on medium another 2-3 minutes.
