Slow Carb Eggs Benedict with Roasted Cauliflower

I love smoked salmon on eggs benny instead of pemeal bacon because it cuts prep time to a point where eggs benedict (or florentine, or whatever you wanna call this creation) becomes a viable weekday breakfast. My eggs benny usually goes on an english muffin with a side of roasted potatoes, but since I’ve been on this 4 hour body Slow Carb diet, the muffin and the potatoes were out. So I replaced both with roasted cauliflower. I also added baby spinach sauteed with garlic.
I’m also usually content with the ‘instant’ powder hollandaise, but sadly that has corn starch, so I had to make from scratch. You can make a bunch and refridgerate it, you can microwave hollandaise too, just do it on low, and if it starts to look a little goopy whisk in a drop or two of cold water.
Now that you have a bunch of refridgerated cauliflower and hollandaise on hand, making this in the morning is a simple matter of poaching the egg, sauteeing a handful of spinach, microwaving the sauce and cauliflower . Total cook time is less than 10 minutes and you start your work day on a gourmet note.

Ingredients

  • 4 egg
  • 1 cup butter
  • 2 tbsps butter
  • 3 1/2 tablespoons lemon juice
  • 1/8 teaspoon sauce worchestershire
  • salt
  • pepper
  • salmon smoked
  • handful spinach baby
  • garlic (I used pickled)
  • cauliflower
  • cauliflower whatever spices you wanna put on the (I used berbere)

Instructions

  • Preheat oven to 400F
  • Cut the cauliflower into small bite size pieces, about the same size you would potatoes you were gonna roast. Lay the pieces out in a caserole dish, drizzle liberally with olive oil and cover with your spices.
  • Roast the cauliflower for around 30 minutes or until itu2019s soft (a fork can easily slide in)
  • Sautee the spinach in butter with garlic til itu2019s how you like it
  • Make your holandaise sauce, or buy it. I only made it from scratch because the instant stuff I use has cornstarch in it.
  • Poach your egg (I like the splash of vinegar and stir the water method, cook for 2:30 mins method)
