Ingredients

  • 3.5-4 lbs Beef roast
  • 5.5 oz V8 Juice
  • 1/4 cup water
  • 1/4 cup white vinegar
  • 1/4 cup ketchup
  • 2 tbsp worchestershire sauce
  • 1/2 cup brown sugar packed
  • 1 tsp salt
  • 1 tsp ground mustard
  • 1 tsp paprika
  • 1/4 tsp chipotle powder
  • 1/4 tsp red pepper flakes
  • 1/8 tsp pepper
  • 5 large kaiser rolls
  • 10 slices pepper jack cheese
  • green chiles
  • carolina mustard BBQ sauce
  • butter

Instructions

  • Combine all the ingredients except the roast, buns, chiles and bbq sauce
  • Cut the roast in half, add it to the slow cooker and pour the liquid over it. Slow cook on high for 5 hours, shred and return to pot for another 1 hour
  • turn on the broiler
  • cut the rolls in half and butter. add shredded meat to the bottom bun, top with chiles, 2 slices cheese and BBQ sauce. Broil til cheese is melted and top bun is toasted. 1-3 minutes
