Ingredients

For the sandwich

  • 2 lbs pork sirloin , shaved thin
  • 1/4 cup bbq sauce
  • 1 cup pickled peppers hot
  • 2 – 3 onion , sliced
  • 6 slices gouda cheese slices smoked
  • sugar
  • salt
  • 24 inch Ciabata bread

For the aioli

  • 1/2 – 2/3 cup mayonnaise
  • 3 tbsps garlic crushed
  • 1 1/2 tbsps lemon juice
  • salt
  • pepper

Instructions

  • Heat oil in a medium skillet, add onions with salt and sugar. Cook on low for 20-30 minutes, stirring occasionally.
  • Whisk together aioli ingredients in a small bowl
  • Toss the meat in a large pan with oil and the spice mix. Brown on medium for about 10 minutes until all pieces are brown. Remove pan from heat and cover with a lid to let rest.
  • Remove bun(s) from oven and allow to cool. Immediately turn on your broiler. Add pork to a mixing bowl and toss with bbq sauce.
  • Cut the buns in half horizontally, place pork on the bottom halfs and liberallky slather the top piece with aioli. Cover the meat with cheese slices and load onions and peppers onto the top piece.
  • Place the sandwiches in the broiler for about 30-60 seconds until cheese is melted.
  • Place tops of sandwiches on their bottoms and cut sandwiches in half.
