Ingredients
The Chicken
- 1 lb chicken thighs boneless skinless, shaved into thin 2" pieces
- 2 tbsp corn starch
- salt and pepper to taste
The Sauce
- 1/4 cup soy sauce
- 2 tbsp water
- 1 tbsp sesame oil
- 3 tbsp brown sugar
- 1 tbsp white rice vinegar
- 1 tsp ginger fresh grated
- 2 tsp chopped garlic
- 1 tbsp sesame seeds
- 1/2 tbsp corn starch
Other
- 1 large green pepper chopped
- 1 large onion chopped
- 3 stalks green onion chopped into greens and whites
- oil for frying
Instructions
- Whisk together the sauce ingredients in a small bowl and set aside
- heat some oil in a large pan on medium high
- While the oil heats, combine the chicken ingredients in a small mixing bowl. Once the oil is sizzling add the chicken to the pan. Use your hand or a slotted spoon, do not pour the entire mixture direct into the pan
- Cook the chicken, stirring frequently until golden brown- about 5 minutes, remove the chicken from the pan with a slotted spoon and set aside
- Add the peppers, yellow onion and green onion whites to the pan and stir fry for 3-5 minutes until the onions soften.
- Return the chicken to the pan, add the sauce and green onion greens.
- Bring the mixture to a simmer, cover and cook on medium-low for 2-3 minutes
- Serve over rice garnished with more sesame seeds
