Quick and Easy Roast Chicken

Those fat cats at the grocery store think they’re too good for the bone in, skin on chicken. But it’s so cheap and flavourful.

Ingredients

  • 2 chicken pieces bone in , skin on
  • rosemary
  • salt (preferably kosher)
  • pepper

Instructions

  • Turn on your ovenu2019s broiler
  • rub the chicken pieces with the spices
  • heat an oven safe skillet (cast iron, natch!) on medium-high and add the chicken
  • cook the chicken 30 seconds per side and put the skillet in the broiler
  • broil the chicken for 4-8 minutes then flip the pieces and cook another 4-8 minutes
  • rest the chicken in tin foil for however long you cooked it.
