Quick and Easy Roast Chicken
Those fat cats at the grocery store think they’re too good for the bone in, skin on chicken. But it’s so cheap and flavourful.

Ingredients
- 2 chicken pieces bone in , skin on
- rosemary
- salt (preferably kosher)
- pepper
Instructions
- Turn on your ovenu2019s broiler
- rub the chicken pieces with the spices
- heat an oven safe skillet (cast iron, natch!) on medium-high and add the chicken
- cook the chicken 30 seconds per side and put the skillet in the broiler
- broil the chicken for 4-8 minutes then flip the pieces and cook another 4-8 minutes
- rest the chicken in tin foil for however long you cooked it.
