Potato Chorizo Hash with Spinach and Red Peppers
Potato Chorizo Hash with Spinach and Red Peppers Recipe by Raymond Selzer

Ingredients
- 2 russet potato
- 1 2 red pepper " , chopped into squares
- 1 bunch spinach baby stems removed
- 1 onion large roughly chopped
- 1 1/2 tbsps chopped garlic
- 1 chorizo large , chopped
- salt
- pepper
- butter for frying
Instructions
- place the potatoes in a microwave safe bowl, prick with a fork and microwave 2-3 minutes on high. Flip the potatoes and microwave on high again another 2-3 minutes.
- Chop the potatoes into 1-2" pieces.
- Heat vegetable oil in a large skillet on medium high. Add chorizo pieces and cook til they release their fat- about 3 minutes.
- Add a large spoonful of butter, when melted add garlic, onions and potatoes. Stir til potatoes are fully coated in chorizo grease. Continue to cook for 5-8 more minutes til potatoes begin to brown.
- In a separate pan, saute spinach in butter until fully wilted. Remove from heat and set aside.
- When potatoes have begun to brown in the skillet, add peppers and spinach. Continue to cook, stirring frequently until potatoes are brown and crunchy.
