Linguine in Shrimp Sauce

Ingredients

  • 28 oz can diced tomatoes drained
  • 300 g shrimp pre cooked , tails and shells removed
  • 1/4 cup basil fresh , chopped
  • 2 tbsps chopped garlic
  • 1/3 cup cream 10 % or 35 %
  • 1/4 cup beef broth
  • linguine
  • olive oil
  • salt
  • pepper
  • 380 g Fresh Mozzarella shredded
  • 1/4 cup dry white wine

Instructions

  • put the linguine on to boil
  • In a large mixing bowl toss the shrimp with olive oil, salt, pepper and garlic
  • Heat a large non stick pan and add shrimp
  • Saute shrimp for 3-5 minutes, then add wine. Turn heat to high til boiling, then reduce and simmer 3-5 minutes
  • Add tomatoes, broth and cream, bring to a boil then reduce the heat to simmer. Simmer sauce 5-8 minutes
  • Reduce heat to low and slowly stir in the cheese.
  • When the linguine is almost done, drain the noodles and add them to the pan with the basil. Cook the noodles in the sauce for 2-3 minutes, Stirring frequently.
