Roasting a single red pepper is dead simple, but if you don’t have the extra 40 mins or so, just grab some from the anti pasto bar in your grocery store or a bottle of them
Servings: 1 serving
Ingredients
- 100 u2013 200 g beef deli roast
- 1 6 u2033 3 u2033 half bun sandwich x cut in
- 1 red pepper
- 1 yellow onion large , sliced into 2u2033 slices
- 1/4 cup mayonnaise
- 1 tbsp chopped garlic
- 1/2 tbsp lemon juice
- 3/4 cup cheese shredded
- salt and pepper ,
- olive oil
- 2 tbsps butter
Instructions
- Preheat the oven to 500F
- In a medium bowl wisk together mayo, garlic, lemon juice, salt and pepper. Cover bowl and refrigerate.
- Put pepper on a baking pan line with tin foil. Put in oven for 30 minutes, turning every 10 minutes.
- In a medium sized skillet heat olive oil on high til almost smoking. Reduce to medium high and add butter and onions. Season with salt. Sautee for 10 minutes, stirring occasionally.
- Remove pepper from oven and cover with tin foil. Let sit til itu2019s cool enough to tough and has collapsed. Remove core and seed and cut into 1/2u2033 strips.
- Spread aioli on insides of bun. Lay face up on a baking sheet. On the bottom piece lay out meat then pile on cheese. Put it in your broiler til cheese is melted and top is toasted, 3-4 minutes.
- Remove from broiler, spread onions and peppers over the cheese, top and slice in half width-wise.
- Server with au jus for dippinu2019
Notes
your choice of cheese, I used swiss, but mozzarella or pepper jack would also be good
