Greek Chicken Frittata
Servings: 8 servings
Ingredients
- 350 g chicken breast diced
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tbsp chopped garlic
- 1 tsp oregano
- 1/2 tsp salt
- 175 g zucchini chopped
- 175 g grape tomatoes halved
- 1/2 medium red onion
- 50 g feta cheese crumbled
- 10 egg
- 1/2 cup 2% milk
- pepper
- 1 cup salsa
Instructions
- pre-heat oven to 350F
- On Medium high, heat the oil, vinegar, garlic, salt and oregano in a large pan.
- When the mixture begins to sizzle, stir in the chicken and brown. About 5-8 minutes. With a slotted spoon remove the chicken and set aside.
- Add the tomatoes and zucchini to the pan and sautee til tomatoes wilt and zucchini browns- another 8-10 minutes.
- Mix together eggs, milk and pepper (to taste) in a large mixing bowl.
- Add chicken, all vegetables and cheese to a 9x13 baking dish. Arrange the ingredients to spread out evenly, then pour in the eggs.
- Bake, covered for 45 minutes until center sets.
- Serve with salsa (2 tbsp per piece)
