Ginger Beef with Button Mushrooms and Kale on Quinoa
Ginger Beef with Button Mushrooms and Kale on Quinoa Recipe by Raymond Selzer
Servings: 4 serving
Ingredients
Marinade
- 1/3 cup soy sauce
- 1/2 cup broth (veggy, chicken or beef)
- 3 tbsps rice vinegar
- 2 tbsps corn starch
- 1 tbsp ginger fresh grated
- pepper
The Rest
- 1 " 1 lb beef fast fry , sliced into squares
- 2 tbsps chopped garlic
- 2 tbsps olive oil
- 2 cups button mushrooms , halved
- 3 cups kale chopped
- 2 green onion , sliced
Instructions
- Whisk the marinade together in a mixing bowl then add it and the beef to a ziplock bag. Massage to coat, then refrigerate at least an hour.
- Cook the quinoa to package directions.
- Remove the beef from the marinade, but keep the marinade. Brown the meat in a large pan or wok. Remove the meat from the wok and set aside
- Add the mushrooms and garlic to the pan and saute til the garlic is fragrant. Then add the kale and pour in the marinade. Bring to a boil and reduce to simmer until the kale wilts. Return the beef to the pan and cook another 3-5 mninutes.
- Garnish with green onions and serve over quinoa
